We love eggs, both for their taste and their protein content. But, add in the mayo and deviled eggs can be a dieter's disaster. He's a quick and simple way to enjoy this holiday staple while not adding all the fat content and calories.

4 whole eggs cut in half |
1 Tbsp. Walden Farms Mayo |
2 Tbsp. mustard (to taste) |
1 tsp. sea salt |
1 dash paprika or sliced green onions for garnish |
Reduced Fat Deviled Eggs Directions
- First, boil the eggs. Place them in a pot and cover them completely with cold water. Bring the water to a boil over high heat.
- As soon as the water begins to boil, turn off the heat and cover the pot. Leave the eggs in the hot water for anywhere from 10-12 minutes, depending on how you like your eggs.
- Finally, move them to an ice bath. When the time is up, drain the eggs and transfer them to a large bowl of ice water for at least 14 minutes before peeling. This stops the cooking process so they don't continue to cook.
- Peel them carefully. Once the ice bath is complete, gently knock the egg on the counter to break the eggshell. You should be able to carefully peel it away along the cracks leaving the egg intact.
- Once you have a plate of beautiful eggs, cut them in half and scoop out the yokes. Keep 2 yokes and throw the other 2 away.
- It all comes together. Mix the yokes with Walden Farms Mayo, salt and mustard (to taste). Spoon the mixture back into the egg halves or use a pastry piping tool if you want them to look fancy.
- Garnish with a sprinkle of paprika or sliced green onions and serve!
