Mock Baked "Apples"

I cannot tell a lie...this recipe tastes so close to real baked apples you'd swear you were eating the center of a warm apple pie right out of the oven, except it's full of veggies! Made with zucchini, it's Ideal Protein Phase 1 approved, super easy to make and delicious for the holidays or when you just have a craving for apple pie. Plus, it's an easy way to get your veggies in without feeling like you're eating something green. YUM!

Ingredients

List:

4 Large zucchini
4 Tbsp. Walden Farms Apple Butter
1 tsp. Allspice
1 Tbsp fresh lemon juice
1 tsp. cinnamon

Directions

  1. Cut a zucchini lengthwise and peel (or leave the peel on if you prefer.)
  2. Cut it crosswise into ‘apple slices’ and de-seed if needed on larger zucchinis.
  3. Put slices in a bowl and drizzle with a little lemon juice.
  4. Stir in Walden Farms Apple Butter, and Allspice.
  5. Mix and spread out in dish.
  6. Sprinkle with cinnamon and drizzle with Walden caramel syrup if you like.
  7. Bake in oven at 350 degrees F for up to 30 minutes or until ‘apples’ are at desired tenderness.
  8. Sprinkle with cinnamon when done baking if desired. Enjoy!! (You might want to let it sit a bit to let the juices thicken.) It’s an experiment; make it to suit your taste!!

Notes

If you want to kick it up a bit, try adding some Walden Farms caramel syrup into the mixture.  
I had it re-heated the morning after so it had time to marinate a bit which made it less juicy, it was amazing!!
