Cauliflower Tabbouleh

We've replaced the bulgur in the typical tabbouleh recipe with crispy cauliflower, making this dish a powerhouse of vitamins and taste! It's a quick and easy way to get all your daily vegetables in.

Ingredients

List:

1 head of cauliflower (raw)
1 small tomato, chopped
1/2 small cucumber, chopped
1 bunch mint, finely chopped
1 bunch parsley, finely chopped
juice from 1 lemon
2 Tbsp. oilive oil
salt and pepper , to taste

Directions

  1. Grate cauliflower to small pieces using hand grater or food processor.
  2. Combine all ingredients and toss well.
  3. Taste the tabbouleh, and add more salt, olive oil or more lemon juice to taste.
  4. Let marinate for at least 30 minutes before serving.
  5. Will keep chilled for several days.
